Right now Spook only supports one camera at a time, but you can accomplish
this just like you say by running two instances of Spook.  Just create two
config files, for example spook.video0.conf and spook.video1.conf, set the
first first for /dev/video0 and the second for /dev/video1, and change the
"Port" line to be 7071 in spook.video1.conf.  Then you can run spook twice
with the -c flag to specify different config files for each instance.

The next version of Spook will support multiple cameras, and then you 
would be able to do this with only one instance of Spook on port 7070, but 
for now, the above should work.  -Nathan
